Grilled Grouper with Mango Salsa

Fresh grouper on the grill with a bright mango-lime salsa. Simple, clean, and perfect for Gulf fish.

Ingredients

  • 2 mangos, chopped
  • 2 firm avocados, diced
  • 1 jalapeño, seeded and minced
  • 1 red bell pepper, chopped
  • 1 poblano pepper, chopped
  • ½ cup chopped fresh cilantro
  • 1 tsp lime zest
  • ¼ cup fresh lime juice
  • 2 tsp minced garlic
  • 1½ tsp salt, divided
  • 8 (8-oz) fresh grouper fillets
  • ¼ cup olive oil
  • ½ tsp ground black pepper
Tip: Keep the avocados firm so the salsa stays chunky.

Directions

  1. In a bowl, combine mango, avocado, jalapeño, bell pepper, poblano, cilantro, lime zest, lime juice, garlic, and ½ tsp salt. Cover and refrigerate at least 1 hour.
  2. Spray grill rack with nonstick, nonflammable cooking spray. Preheat grill to medium-high (350° to 400°).
  3. Brush both sides of grouper with olive oil. Sprinkle with remaining 1 tsp salt and black pepper.
  4. Grill, covered, 3 to 4 minutes per side, or until fish flakes and is opaque in the center.
  5. Serve immediately with mango salsa.
