Creole Flounder

Quick oven-baked flounder with tomatoes, peppers, lemon, and a little heat. Weeknight Louisiana style.

Oven 450°F

Ingredients

  • 2 lb flounder fillets
  • 1½ cups diced tomatoes
  • ½ cup diced green pepper
  • ⅓ cup lemon juice
  • 1 tbsp vegetable oil
  • 2 tsp salt
  • 2 tsp onion powder
  • 1 tsp basil
  • ¼ tsp black pepper
  • 4 drops hot pepper sauce
Tip: Flounder cooks fast—start checking at 6 minutes.

Directions

  1. Heat oven to 450°F.
  2. Place fish in a greased 13" × 9" baking dish.
  3. Mix remaining ingredients and spread over fish.
  4. Bake 6–10 minutes or until fish flakes easily with a fork.
